This
is an amerindian dish that can be traced
GUYANA, SOUTH AMERICA, Where it has become the national dish.Cassareep,
the main seasoning ingredient,is a syrupy, carmelized residue
made from boiling grated cassava (yuca root)with certain spices
of meat(oxtail,cowfoot,and beef)are slowly simmered for several
hours in water with cassareep and hot peppers until all of the
meats are tender and a thick dark gravy forms. It is served
with crusty bread for sunday breakfast or over a bed rice for
lunch or dinner.
